The 'Cake Boss' Predicts Third Season Will Be 'Crazier'

Up the narrow staircase of the nearly 100-year-old Carlo's Bake Shop -- which has over 100 employees battling for room in the surprisingly small space -- sits the office of 'Cake Boss' star Buddy Valastro, whose larger-than-life personality can barely be contained.
Valastro talked with PopEater about the upcoming season of his popular series and what kind of cakes he'll be making in the future. "The cakes are bigger, crazier. I think it's a little simplified in a sense where I really wanted to be authentic to what happens in the bakery. I went and looked at the cakes that I have and just followed the cakes that were coming up week to week. So many, many cakes. I made a cake for my wife – for her 30th birthday, which was a life-size replica of her," he tells us.
The baker also shares some cooking secrets amd shows us how he expertly ices a cake.

I'm so excited.
Tell me what we can expect.
The cakes are bigger, crazier. I think it's a little simplified in a sense where I really wanted to be authentic to what happens in the bakery. I went and looked at the cakes that I have and just followed the cakes that were coming up week to week. So many many cakes. I made a cake for my wife – for her 30th birthday, which was a life-size replica of her ... that was just one of the cakes. We did a cake for National Train Day, which was 25-feet long by 10-feet wide ... Insane stuff, really pushing the envelope. I'm very proud of the cakes this season. And [you'll see] more of what's going on in my life. My lifestyle has changed. I'm busier. I'm more noticed. It's showing the growing pains and adjustments to all that. I'm opening a factory to help produce the cakes. Also, we are going to Italy with the show, so that should be fun. We're going to trace back the roots and have some fun in Italy ... I'm very confident that this season is our season to shine. The episodes are great, the storylines – everything we do is so perfect.
When you started, did you think 'Cake Boss' would become as big as it is?
I thought it would become big. I really did. I believed it was going to succeed and I believed that it was going to be good. I didn't know ... how big and how quick. It's gotten so big, so quick, it's insane. My favorite part about it is just seeing the people who watch the show -- six-year-old kids, 10-year-old kids, 18-year-old kids, grandparents. People from all walks of life gather around the TV to watch 'Cake Boss.' They come together as a family. And at the end of the day, the core message I want to send is, "Yeah, it's crazier, we're a bakery, but we're family." And to see families coming around to watch my message about family every week, as crazy as it is, I didn't think it was going to become that. But it has evolved into that. It's bigger and more of a dream come true than I could have every dreamed.
As much as people like reality stars as train wrecks, I think they like to see regular, happy people more.
Absolutely. I think a show like this has got a lot more legs and longevity. TLC is a great partner, a great network to be doing this with, because they don't want to show only bad things. Because look, we have ups and downs – you'll see it on the show – but at the end of the day, we come together as one. We're family.

Were you ever worried about how you were going to be portrayed?
I'll be honest with you, I was in the beginning. But I was very comfortable knowing it was TLC and Discovery, because they aren't the kind of channel to play around with that kind of stuff. I mean, if I was on MTV or Bravo ... Not to discredit those networks, because I think they are great networks, but they want the drama.
Do you have a favorite cake you've ever made, or are there too many to pick just one?
I would say my favorite cake is the cake I made of my wife, so far. It was such a different challenge. I didn't know I had it in me.
Did you eat this cake, too?
We did. It was pretty cool. I'm over cutting up my masterpieces. I'm over that years ago.
What kind of cake is it?
It was pound cake, because of the structure. Certain cakes have to be a certain type of cake because of the gravity [issue].
Now, I know you know how to do things that aren't baking.
I know how to cook!
What do you like to cook?
I'm more of a chef, that if you throw me in a kitchen ... I could scurry through your cabinets, I could figure something out. That's the kind of chef I am. If I had a say, I love making different types of pasta, fish, meat. I'm very diverse. I'm the type of person who goes to a restaurant and tastes a delicious meal and then I'm able to pick out the ingredients in it and go home and replicate it. That's the way my palate is built.
That's interesting because baking is so structured. You can't just throw anything in there, you have to follow a strict recipe.
Exactly. The thing is, what I try to do is put some of that baking into my cooking ... [Cooking] is like cake decorating. Baking a cake is structured. You need all the ingredients to work. Everything has to come together. But when you cake decorate, it's free form. If I want it to be pink, it can be pink. It can be blue. It can be this, it can be that. It's whatever, visually, is going to make me happy. It's art. Cooking is another form of art. This is what I like hot, or I don't like it spicy. I want it to be mild, I want it to be sweet. It's an expression of our palate.
If you could only make one type of cake for the rest of your life, what would it be?
Pastry or cake?
Cake.
I like a vanilla cake with fresh cream and fresh strawberries.
Now, who would be your dream client?
Any President. Just to say that I made a cake for the President. It would be a big honor. I believe that I will get called upon by my country to make a cake for the President.
Do you have a particular cake in mind?
I'd replicate the White House – on a nice, big scale. I'd bring it to the White House and present it to the President. Also, I'd like to make a cake for the troops overseas who are fighting. That would be very special.
What is the best part of the 'Cake Boss' experience?
The best part would be being able to use your persona for good. My dad always taught me to make an impression on people and always do the right things. And I have my whole life, honestly. 'Cake Boss' is a platform for me to do it on a global scale. To show people what I really think about family. Or to show people what I really think about the baking industry. And to show people it is worth it to go out of your way for [others]. You should. A lot of that stuff you don't always see on the show, it doesn't always make it, but we always try and do the right thing. We always try to do good things to help people because [they] deserve it. You give and you will receive. I'm a firm believer in always trying to give back and do the right thing.
What's your favorite reaction that you've gotten?
I've been noticing how my show has been helping the baking industry. Because bakers from around the country are telling me that people see 'Cake Boss' and they want cakes like [that]. I'm helping my industry, which means a lot to me.
What other shows do you watch?
I don't watch as much TV as I used to. I'm a big Yankees fan, a big Giants fan, so I always watch the Giants and the Yankees. Shows I like – I watch 'Dexter,' 'Californication,' 'The Tudors' and 'Entourage.' I watch 'American Idol,' [and] I like 'Dancing With the Stars.'

Buddy has the best show on TLC. I watch every episode,I like that his family is so close and they all have contributed to his good fortune.He knows that there 'ain't nothin' like family to keep your head on straight!! Go Buddy Go!

I don't know what show you are watching. I have seen a coule of them and I can't stand it. First off Buddy is so loud and overbearing that no one can stand him and his mother is the same. Secondly you can see how scripted the whole show is. It is not reality like they try to claim. Third on all these cake shows they claim that these extremely sculpted cakes are cake but when you watch they are put together with rice krispie treats and stuff like that so i don't know what part is actually cake. And last but not least, I know what the laws are for food handlers in the state of NJ and I never see anyone on any of these shows wearing the required hair nets or hair coverings. I also see them working on these cakes for days so by the time the client gets the cake it is stale. Finally, whenever a delivery is made the cakes are not revealed at these parties or affairs untilt he very end. I do not believe any of it.

That cake he mentioned ... the one with the cream and strawberries sounds so right for Memorial Day . Yummy. I like his show but he does get a little boisterious. Nice family show.

I have never been to his shop but I have heard the same thing from several people that have. they say that his cakes are horrible and extremely expensive.

I don't know how anyone can stand watching that show. I don't like Buddy at all. He is loud and he is whinny. His mother is overbearing and bossy and also has a whinny voice which I can't stand. I live in NJ but I have never been to his bakery but I have talked to several people who have and they all say the same thing. His cakes are disgusting and the prices are ridiculessly expensive. They are probably more so now that he has his 15 minutes of fame on TV.

WRONG again pal! I have been there and ate the baked goods which were awesome. Take your angry self and turn the channel
back to watching Snoop Dog. The guy is a hard worker and if you noticed he has loyal workers. You reap what you sow.
Its a shame that people do not like his cake and the prices are too high.
I remember the bakery that was in this spot in the 1950 to 1970. Had the best rolls, breads, cakes.

He does make beautiful cakes, so we diced to go there and I bought Cannoli's and brownies. They were horrible. Cannoli's are supposed to be sweet but not his. Much to be desired.

My daughter and I went to New York to celebrate her 25th birthday. She loves the "Cake Boss" TV show and Buddy. She was so excited and happy that she got to meet Buddy in person on her birthday May 8th. She took a picture with him. She loved the bakery and bought lots of stuff. She'll never forget it. Buddy was so gracious to her. I'm happy the show is such a success. Family is very important. That's one of the messages from his show.

That is by far one of the stupidest shows on TV, we pay good money to be entertained and we get crap like that also the stupid Pawn broker program....

you don't have to watch, ya know. Your TV has a remote for a reason. If you are paying good money for TV entertainment, you should have at lease 200 channels and Cake Boss is only on one.
He's just expressing his views of the show. He probably doesn't watch it.
i watch the cake boss and all the other cake shows as well!!!!!! frankly i just love to watch all of them make beautiful cakes! i have NO baking talent so it is amazing to me. i just order cakes, and try and get a nice one for whatever the reason or party that i need it for. buddy has some cool ways to make his cakes stand out. love his show, could do without the silly stuff.

We like to see the cakes and all the creativity that goes into them but we quit watching because we were tired of Buddy's tantrums and how he screams at his team members.
I don't think we see him praising or thanking his team/family members enough. He needs to be a better role model I certainly want to work for someone that goes off on an employee in front of the entire staff - it's unprofessional.
I like the show but personally I like Ace of Cakes better.
