The 'Cake Boss' Predicts Third Season Will Be 'Crazier'

Up the narrow staircase of the nearly 100-year-old Carlo's Bake Shop -- which has over 100 employees battling for room in the surprisingly small space -- sits the office of 'Cake Boss' star Buddy Valastro, whose larger-than-life personality can barely be contained.
Valastro talked with PopEater about the upcoming season of his popular series and what kind of cakes he'll be making in the future. "The cakes are bigger, crazier. I think it's a little simplified in a sense where I really wanted to be authentic to what happens in the bakery. I went and looked at the cakes that I have and just followed the cakes that were coming up week to week. So many, many cakes. I made a cake for my wife – for her 30th birthday, which was a life-size replica of her," he tells us.
The baker also shares some cooking secrets amd shows us how he expertly ices a cake.

I'm so excited.
Tell me what we can expect.
The cakes are bigger, crazier. I think it's a little simplified in a sense where I really wanted to be authentic to what happens in the bakery. I went and looked at the cakes that I have and just followed the cakes that were coming up week to week. So many many cakes. I made a cake for my wife – for her 30th birthday, which was a life-size replica of her ... that was just one of the cakes. We did a cake for National Train Day, which was 25-feet long by 10-feet wide ... Insane stuff, really pushing the envelope. I'm very proud of the cakes this season. And [you'll see] more of what's going on in my life. My lifestyle has changed. I'm busier. I'm more noticed. It's showing the growing pains and adjustments to all that. I'm opening a factory to help produce the cakes. Also, we are going to Italy with the show, so that should be fun. We're going to trace back the roots and have some fun in Italy ... I'm very confident that this season is our season to shine. The episodes are great, the storylines – everything we do is so perfect.
When you started, did you think 'Cake Boss' would become as big as it is?
I thought it would become big. I really did. I believed it was going to succeed and I believed that it was going to be good. I didn't know ... how big and how quick. It's gotten so big, so quick, it's insane. My favorite part about it is just seeing the people who watch the show -- six-year-old kids, 10-year-old kids, 18-year-old kids, grandparents. People from all walks of life gather around the TV to watch 'Cake Boss.' They come together as a family. And at the end of the day, the core message I want to send is, "Yeah, it's crazier, we're a bakery, but we're family." And to see families coming around to watch my message about family every week, as crazy as it is, I didn't think it was going to become that. But it has evolved into that. It's bigger and more of a dream come true than I could have every dreamed.
As much as people like reality stars as train wrecks, I think they like to see regular, happy people more.
Absolutely. I think a show like this has got a lot more legs and longevity. TLC is a great partner, a great network to be doing this with, because they don't want to show only bad things. Because look, we have ups and downs – you'll see it on the show – but at the end of the day, we come together as one. We're family.

Were you ever worried about how you were going to be portrayed?
I'll be honest with you, I was in the beginning. But I was very comfortable knowing it was TLC and Discovery, because they aren't the kind of channel to play around with that kind of stuff. I mean, if I was on MTV or Bravo ... Not to discredit those networks, because I think they are great networks, but they want the drama.
Do you have a favorite cake you've ever made, or are there too many to pick just one?
I would say my favorite cake is the cake I made of my wife, so far. It was such a different challenge. I didn't know I had it in me.
Did you eat this cake, too?
We did. It was pretty cool. I'm over cutting up my masterpieces. I'm over that years ago.
What kind of cake is it?
It was pound cake, because of the structure. Certain cakes have to be a certain type of cake because of the gravity [issue].
Now, I know you know how to do things that aren't baking.
I know how to cook!
What do you like to cook?
I'm more of a chef, that if you throw me in a kitchen ... I could scurry through your cabinets, I could figure something out. That's the kind of chef I am. If I had a say, I love making different types of pasta, fish, meat. I'm very diverse. I'm the type of person who goes to a restaurant and tastes a delicious meal and then I'm able to pick out the ingredients in it and go home and replicate it. That's the way my palate is built.
That's interesting because baking is so structured. You can't just throw anything in there, you have to follow a strict recipe.
Exactly. The thing is, what I try to do is put some of that baking into my cooking ... [Cooking] is like cake decorating. Baking a cake is structured. You need all the ingredients to work. Everything has to come together. But when you cake decorate, it's free form. If I want it to be pink, it can be pink. It can be blue. It can be this, it can be that. It's whatever, visually, is going to make me happy. It's art. Cooking is another form of art. This is what I like hot, or I don't like it spicy. I want it to be mild, I want it to be sweet. It's an expression of our palate.
If you could only make one type of cake for the rest of your life, what would it be?
Pastry or cake?
Cake.
I like a vanilla cake with fresh cream and fresh strawberries.
Now, who would be your dream client?
Any President. Just to say that I made a cake for the President. It would be a big honor. I believe that I will get called upon by my country to make a cake for the President.
Do you have a particular cake in mind?
I'd replicate the White House – on a nice, big scale. I'd bring it to the White House and present it to the President. Also, I'd like to make a cake for the troops overseas who are fighting. That would be very special.
What is the best part of the 'Cake Boss' experience?
The best part would be being able to use your persona for good. My dad always taught me to make an impression on people and always do the right things. And I have my whole life, honestly. 'Cake Boss' is a platform for me to do it on a global scale. To show people what I really think about family. Or to show people what I really think about the baking industry. And to show people it is worth it to go out of your way for [others]. You should. A lot of that stuff you don't always see on the show, it doesn't always make it, but we always try and do the right thing. We always try to do good things to help people because [they] deserve it. You give and you will receive. I'm a firm believer in always trying to give back and do the right thing.
What's your favorite reaction that you've gotten?
I've been noticing how my show has been helping the baking industry. Because bakers from around the country are telling me that people see 'Cake Boss' and they want cakes like [that]. I'm helping my industry, which means a lot to me.
What other shows do you watch?
I don't watch as much TV as I used to. I'm a big Yankees fan, a big Giants fan, so I always watch the Giants and the Yankees. Shows I like – I watch 'Dexter,' 'Californication,' 'The Tudors' and 'Entourage.' I watch 'American Idol,' [and] I like 'Dancing With the Stars.'

I really love Cake Boss they are awesome show and i can't wait see it and i kind like what buddy make the cake and i wish buddy could make cake for my birthday next year and i believe that he awesome!

I have been going to Carlos for over 30 years.
The quality of there cakes have gone down the drain since the show.
I think there too busy now.
He has raised his prices, and his old loyal costumers cannot get in the door.
I now go to Giorgios uptown. No line and way cheaper.

I visted the bakery this past winter. It was very crowded, but the staff was courteous and allowed us to take pictures.The pasties we bought were delicious

I was a cake artist up until a couple of years ago. I did very high end cakes. Everyone told me that I should watch this show, that I would love it. Well, I watched 2 episodes and all it did for me was bring back bad memories and remind me why I quit. I saw the episode where they did a beautiful cake for a real bridezilla and she refused it, not only that she deliberately ruined it, and he made his employees stay that night to do another cake--after they had already worked a really long day. They were set to go home....but no. That is why my health is the pits now, because of being forced to work 15 hour days over and over with no breaks...just a moment to stuff something down my throat then back to the work. My boss, like the cake-boss, didn't care how I was, if an order came in I HAD to do it, regardless of if I was sick, overworked, had plans, etc. She never worked as hard as we did, and the "cake boss" seems an awful lot like her.

AMEN MISTY people think your having a great time because as they put you get to play in frosting all day what they don't realize is just how much work goes into it if I didn't have good benefits I be out to.

As a cake decorator myself these shows make it hard on the rest of us because they are charging ALOT of money for these cakes and the customers think they can get a cake like the ones they see on these shows. For one thing the majoritity of us use buttercream not fondant which is a rolled icing and not very tasty buttercream is just that cream and they are given a week alot of times to do these cakes where we are given 1 day we charge 20.00 they charge hundreds at least I can't tell you how many times we have had request for something someone has seen on these shows and its' just not possible with the kind of icing we use these shows are fun but they are just not that realistic for the average person that wants a birthday cake.

Donate the tasty mistake to a shelter or hospital or pantry distributor or something like that....
The garbage can doesn't deserve such wonderful desserts: wrong color, wrong icing style, wrong design, etc.; but edible. How about it???

The program could have a lot less drama. The cakes are awesome! But no employee family or not would put up with the abuse. It all show I know. But it gets a little tiresome. Tone it down Buddy.

I love this show. I think them working as a family is great. But nothing is better when the mom gets everybody straight. She really is the cake boss. Sometimes Buddy's temper is an insult to the rest of the family, but for the most part it is great. I wish they would show the prices of the cakes.

One thing I noticed about his cakes is that so much of the cake is actually rice crispy treats. Who wants a cake that is 50, 60, 70% cereal? Do they actually make cakes that are made up of something beside pound cake and rice crispy treats? So much of the show is CLEARLY scripted and put on but isn't all reality TV? He does awesome stuff but not much that you see people actually eat on the show.
